Capuchadou Guilloché Knife 10 cm
The term "Capuchadou" literally means "to cut" in the dialect(s) of Southern France and it was the name attributed to the simple, fixed-point knife used by farmers and shepherds before the creation of the Laguiole knife in the 1830s. Later, in the 1990s, knife designer Richard Sossler re-envisaged the Capuchadou knife into its current form. The guilloché version of these knives feature additional carved sections that extend beyond the spring onto the blade and also more elaborate carving on the tang.

The Laguiole knife is best associated with the town of Laguiole in the Aveyron region of southern France. Evolving from the traditional straight blade knives used by local shepherds and farmers, the first true Laguiole was designed by Jean-Pierre Calmels in 1829 and (during the almost two hundred years to follow) has become a worldwide icon.
